EFO RIRO AND POUNDED YAM

Ingredients:  
3 cooking spoon palm oil  

1 small size onion (chopped) 

pepper [shallots(10pcs),

sweet red pepper(10pcs)] 

tomatoes(10pcs)  

1 big size onion 

smoked fish 

snails  shrimps 

stewed offal pieces (liver, kidney, tripe, heart, intestines etc) 

buillon cubes  leafy vegetable( spinach, water leaves or ugwu etc) 
locust bean seeds(iru)  

Procedure: 
* Heat oil in a sauce pan( do not bleach), add the chopped onions and fry until tender. 
* Grind peppers, onions and tomatoes.  

* Add the pepper, locust bean seeds and bullion cubes, leave fry. 

  * Add the fish, boiled snails & shrimps and offals and make sure most is immersed in the pepper.  

*Leave to simmer for 10- 15 minutes.
  
*Remove the fish, snails, shrimps and offals and put in a bowl.  

*Add the green leaves to the fried pepper and simmer until cooked.

  *Correct seasoning. 


Serve with Eba, Fufu, Iyan, white Rice etc  Serving Size:  8 servings
